Harvest Time

I love the fall. It's warmth in colors, smells, and food. For my daughter's first birthday I made a wonderful Italian ham & bean soup that warms the bones, caprese salad with a balsamic & fig reduction, broccoli, and artisan bread. Of course, you can not forget the champagne. It was so good, and warming, a great way to spend her 1st birthday. This is my families recipe for the Italian ham & bean soup.

Italian Ham & Bean Soup

1 Ham bone with meat
1/4 cup chopped pancetta
2 cups white beans-

cleaned and soaked for 24 hours

1/2 cup finely chopped celery

1/2 cup finely chopped onion

2 8oz cans of chopped Italian tomatoes

1/8 cup finely chopped parsley

2-4 cups water depending on crock pot size

Salt and Pepper to taste

Put all ingredients into your crock pot and simmer for 8 hours.

The secret- put it in the fridge for 24-48 hours, re-heat on low and enjoy.
